Cobia which is also known in the Gulf of Mexico as Ling is definitely in my top 5 fish list to eat. When cooked correctly it is hard to tell the difference between the cobia and a great pork chop. The mistake people make with cobia is overcooking it and drying it out just like a pork chop. Rattlesnake Jakes, Pops Fish Market, and Blue Moon Fish Company are local establishments that cook it perfect every time. If you catch a cobia don't be afraid to reach out to these guys for directions on preparation. As for the fish itself we have been catching them on the local wrecks and when we are drifting and chumming heavily. Make sure to always be ready as the cobia will show up boat side when you least expect it.
