Break Out the Smoker For Some Kingfish Dip

Pictured here is our South Carolina charter from a few days back. The kingfish bite has been excellent as we have been catching fish in the 12-pound range. These are perfect size kingfish for the smoker. Personally, I like to eat kingfish the same day it is caught or the next day. I find that kingfish gets fishy tasting after a few days, so we resort to smoking a lot of these fish. We make fish dip and kingfish salad from the fillets. Kingfish is great for fish dip because it has a bit of an oily consistency which actually makes it great tasting and moist in the dip. Some guys will brine the fish prior to the smoker but either way give it a shot if you love dip. 

As I am writing this article, we just had a triple header bite and caught one wahoo. We are coming off of the backside of the moon which is perfect for getting tight on the wahoo troll. Bonito have been mixed in to our catches which makes us happy because that's what we used for bait most of the time. 

The offshore bite remains slow both for mahi-mahi and for swordfish.

The crazy mutton snapper bite is also still going on so if you get a chance to venture out most of the great fishing has been off Fort Lauderdale around the wrecks.
